Microwave Peanut Brittle

This recipe is so simple. The mixture is very HOT so handle with caution and keep a bowl of ice water and some aloe gel handy, just in case. As all microwaves are different, you may have to reduce microwave times by 1-2 minutes.
1c white sugar
1 c peanuts
1/2c corn syrup
1 tsp butter
1 tsp vanilla
1tsp baking soda

Stir sugar and corn syrup together in a microwaveable casserole dish. Microwave on high for 4 minutes. Add peanuts, stir and microwave on high for 3-5 minutes (until mixture turns light brown). Stir in butter and vanilla and microwave on high for 1-2 minutes.

Remove from microwave and add baking soda. Blend well.

Pour onto cookie sheet and cool for 1-2 hours. Hit brittle with the end of a wooden spoon to break into pieces. Store in an airtight container. Keeps for up to a week.
